Jerk Chicken with Black Beans and Rice Recipe






Here's a basic recipe for jerk chicken with black beans, rice, and jerk sauce by Grace. Please note that "Grace" is a Jamaican brand that sells a popular jerk seasoning. You can use their jerk seasoning in this recipe or any other brand you prefer.

Ingredients:

For the Jerk Chicken:

  1. 2 lbs chicken thighs (you can use any cut of chicken you prefer)
  2. 4 tablespoons Grace Jerk Seasoning, adjust to suit taste
  3. 1 tablespoon vegetable oil
  4. Salt to taste

For the Black Beans and Rice:

  1. 2 cups long grain white rice
  2. 4 cups chicken broth or water
  3. 1 can black beans, rinsed and drained
  4. 1 small onion, finely chopped
  5. 2 cloves garlic, minced
  6. 1 teaspoon salt
  7. 1 tablespoon vegetable oil

For the Jerk Sauce:

  1. 1/4 cup Grace Jerk Seasoning
  2. 2 tablespoons soy sauce
  3. 2 tablespoons vinegar
  4. 2 tablespoons brown sugar
  5. 1/2 cup ketchup
  6. 1/2 cup water

Instructions:

For the Jerk Chicken:

  1. Rinse the chicken thighs, pat dry, and season with salt.
  2. Rub the Grace Jerk Seasoning over the chicken until well coated.
  3. Let the chicken marinate for at least 2 hours, or even better, overnight in the refrigerator.
  4. Preheat a grill or oven to medium heat (around 350°F/175°C). If grilling, lightly oil the grill grate.
  5. Cook the chicken on the preheated grill, turning occasionally until the chicken is no longer pink inside, and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the thickest part should read 165°F (74°C). If baking, cook for about 45 minutes, or until cooked through.

For the Black Beans and Rice:

  1. Rinse the rice under cold water until the water runs clear.
  2. Heat oil in a large saucepan over medium heat. Add the chopped onion and minced garlic, cooking until the onion becomes translucent.
  3. Add the rice to the pan, stirring for a couple of minutes until the rice becomes slightly toasted.
  4. Add the chicken broth or water, black beans, and salt.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and let simmer for about 20 minutes or until the rice is cooked and the liquid absorbed. Fluff the rice with a fork.

For the Jerk Sauce:

  1. In a small saucepan, combine the Grace Jerk Seasoning, soy sauce, vinegar, brown sugar, ketchup, and water.
  2. Bring the mixture to a simmer over medium heat, and let it simmer for about 10-15 minutes until it thickens slightly.

Serve the jerk chicken on a bed of black beans and rice, and drizzle the jerk sauce over the top. Enjoy your Jamaican-inspired meal!
